Preparation

1.Preheat the oven to 160°C (320°F).

2.Crush the biscuits into fine crumbs and mix with melted butter and honey.

3.Press the mixture into the bottom of a 23cm (9 inch) springform pan.

4.In a large bowl, beat the fresh cheese, sour cream, and sugar until smooth.

5.Add the eggs one at a time, beating well after each addition.

6.Mix in the vanilla extract, lemon juice, and cornstarch.

7.Pour the mixture into the prepared crust.

8.Bake for 60-70 minutes or until the cheesecake is set.

9.Let the cheesecake cool to room temperature before refrigerating for at least 4 hours or overnight.
