Ingredients
In this adaptation, we have replaced some of the traditional Korean ingredients with Canarian counterparts to create a dish that reflects the flavors of the Canary Islands. The original Ogokbap typically uses short-grain rice, but we have incorporated Canarian rice varieties, such as Bomba or Arroz Negro, to add a local touch. Additionally, we have infused the dish with Canarian spices, such as pimentón (smoked paprika) and cilantro, to enhance the Canarian flavor profile. Preparation

1.Rinse the Canarian rice, barley, and red kidney beans under cold water.

2.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the Canarian rice, barley, corn kernels, red kidney beans, and green peas to the pot. Stir well to combine.

4.Sprinkle the pimentón, cumin, turmeric, salt, and black pepper over the grains. Mix until evenly coated.

5.Pour the vegetable broth into the pot and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the grains are tender and the liquid is absorbed.

6.Remove the pot from heat and let it sit, covered, for 5 minutes.

7.Fluff the Canarian-style Mixed Grain Rice with a fork and garnish with fresh cilantro before serving.
