Ingredients

In this adaptation, we replace the traditional American pancakes with plantain pancakes, which are a staple in Central African cuisine. The addition of plantains adds a unique flavor and texture to the pancakes, making them more moist and slightly sweet. Additionally, we use a honey glaze instead of maple syrup to enhance the sweetness and complement the flavors of the plantains. We alse have the original recipe for Pancakes with Maple Syrup, so you can check it out.

Preparation

  1. 1.
In a large mixing bowl, combine the mashed plantains, flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. 2.
In a separate bowl, whisk together the milk, eggs, and vegetable oil.
  3. 3.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. 4.
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
  5. 5.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  6. 6.
    Repeat with the remaining batter.
  7. 7.
Once the pancakes are cooked, drizzle them with honey for a sweet glaze.

Treat your ingredients with care...

  • Plantains — Make sure to use ripe plantains with yellow or black skin for the best flavor and sweetness. Overripe plantains with black skin will be sweeter and easier to mash.

Tips & Tricks

  • For extra flavor, you can add a pinch of ground cloves or cardamom to the pancake batter.
  • Serve the pancakes warm with a dollop of whipped cream or a sprinkle of powdered sugar for an extra touch of sweetness.
  • If you prefer a thinner pancake, you can add a little more milk to the batter.

Serving advice

Serve the Central African plantain pancakes warm with a drizzle of honey glaze. They can be enjoyed on their own or with a side of fresh fruit for a complete breakfast or brunch.

Presentation advice
