Preparation

1.Drain and rinse the soaked beans.

2.In a large pot, heat the olive oil over medium heat.

3.Add the diced onion and minced garlic to the pot and sauté until translucent.

4.Add the diced carrots, celery, and red bell pepper to the pot and cook for 5 minutes, until slightly softened.

5.Stir in the sweet corn kernels, dried thyme, and dried rosemary, and cook for another 2 minutes.

6.Add the soaked beans and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 to 1.5 hours, or until the beans are tender.

7.Season with salt and pepper to taste.

8.Serve the stew hot, garnished with fresh parsley.
