Preparation

1.Heat the vegetable oil in a large pan over medium heat.

2.Add the sliced game meat and cook until browned. Remove from the pan and set aside.

3.In the same pan, add the chopped onion and bell peppers. Sauté until the vegetables are tender.

4.Add the diced tomatoes and cook for a few minutes until they soften.

5.Return the cooked game meat to the pan and mix well with the vegetables.

6.Add the diced sweet potatoes and season with ground coriander, ground cumin, salt, and pepper. Stir to combine.

7.Cover the pan and cook for about 15-20 minutes, or until the sweet potatoes are tender.

8.In a separate bowl, beat the eggs and pour them over the potato and meat mixture. Stir gently to combine and cook until the eggs are fully cooked.
