The Taiwanese-style satay features a marinade with soy sauce, garlic, and ginger, giving it a savory and aromatic profile. 1.In a bowl, combine the sliced chicken, soy sauce, minced garlic, grated ginger, vegetable oil, and a pinch of salt and pepper. Mix well and let it marinate for at least 30 minutes.

2.In the meantime, prepare the peanut sauce. In a saucepan over medium heat, combine the pineapple juice, soy sauce, brown sugar, rice vinegar, sesame oil, peanut butter, water, and chili flakes (if using). Stir until well combined and heated through. Remove from heat and set aside.

3.Preheat the grill or grill pan over medium-high heat.

4.Thread the marinated chicken slices onto the soaked bamboo skewers.

5.Grill the skewers for about 3-4 minutes on each side, or until the chicken is cooked through and slightly charred.

6.Serve the grilled chicken skewers with the prepared peanut sauce on the side.
