1.In a bowl, combine the olive oil, lemon juice, soy sauce, minced garlic, dried oregano, salt, and pepper. Whisk until well combined.

2.Add the cubed tofu, bell peppers, red onion, and cherry tomatoes to the marinade. Toss gently to coat all the ingredients. Let it marinate for at least 30 minutes, or overnight for more flavor.

3.Preheat the grill or grill pan over medium-high heat.

4.Thread the marinated tofu, bell peppers, red onion, and cherry tomatoes onto skewers.

5.Grill the skewers for about 10-12 minutes, turning occasionally, until the tofu and vegetables are nicely charred and cooked through.

6.While the skewers are grilling, warm the pita breads on the grill for a minute on each side.

7.Serve the grilled tofu and vegetable skewers on warm pita breads, topped with vegan tzatziki sauce and fresh parsley.
