Ingredients
In this Marshallese adaptation, we infuse the traditional Italian Spiedo Bresciano with the tropical flavors of the Marshallese Islands. The original dish typically consists of skewered meats, such as pork, beef, and chicken, cooked over an open fire. In our version, we incorporate local Marshallese ingredients, such as fresh pineapple, papaya, and bell peppers, to add a burst of tropical sweetness. Additionally, we marinate the meat in a blend of coconut milk, lime juice, and island spices to infuse it with the unique flavors of the Marshallese cuisine. Preparation

1.In a bowl, combine the coconut milk, lime juice, minced garlic, soy sauce, brown sugar, ground ginger, ground turmeric, salt, and pepper. Mix well to create the marinade.

2.Place the chicken and pork pieces in separate bowls and pour half of the marinade over each. Toss to coat the meat evenly. Cover the bowls and refrigerate for at least 2 hours, or overnight for best results.

3.Preheat the grill to medium-high heat.

4.Thread the marinated meat, pineapple chunks, papaya chunks, bell pepper chunks, and red onion chunks onto the soaked wooden skewers, alternating between ingredients.

5.Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and the fruits and vegetables are slightly charred.

6.Remove the skewers from the grill and let them rest for a few minutes before serving.
