However, in this Malian-inspired adaptation, we have replaced the meat with a variety of vegetables commonly found in Mali, such as okra, eggplant, and tomatoes. Preparation

    Rinse the millet under cold water and drain.

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

    Add the ground ginger, cumin, and coriander to the pot, and stir for a minute to release their flavors.

    Add the sliced okra, diced eggplant, and tomatoes to the pot, and cook for a few minutes until the vegetables start to soften.
