Preparation

1.In a large pot, bring water to a boil and blanch the collard greens for 2 minutes. Drain and set aside.

2.In a mixing bowl, combine the buttermilk, hot sauce, and a pinch of salt. Add the blanched collard greens and toss to coat. Let it marinate for 30 minutes.

3.In a separate bowl, mix the cornmeal, flour, smoked paprika, garlic powder, salt, and black pepper.

4.Heat vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).

5.Take a handful of the marinated collard greens, allowing any excess buttermilk to drip off, and coat them in the cornmeal mixture.

6.Carefully place the coated collard greens in the hot oil and fry until golden brown and crispy, about 3-4 minutes. Repeat with the remaining greens.

7.Remove the fried collard greens from the oil and place them on a paper towel-lined plate to drain excess oil.
