Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large pot, bring the chicken or vegetable broth to a boil.

3.Add the fragrant rice, black pepper powder, cardamom powder, and cinnamon powder to the boiling broth. Stir well and reduce the heat to low. Cook the rice until it is 80% done.

4.Once the rice is cooked, remove it from the heat and drain any excess liquid.

5.In a separate saucepan, heat the coconut milk over low heat until warm.

6.Grease a baking dish with butter or oil. Layer half of the cooked rice in the bottom of the dish.

7.Pour half of the warm coconut milk over the rice layer.

8.Sprinkle half of the grated Kodava cheese and half of the grated Kodava smoked cheese over the rice and coconut milk layer.

9.Repeat the layers with the remaining rice, coconut milk, and cheeses.

10.Cover the baking dish with aluminum foil and bake for 30 minutes.

11.Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.

12.Allow the casserole to cool for a few minutes before serving.
