The original Italian dish is typically made with bread soaked in broth, while our Kodava-style version replaces the bread with fragrant rice. Additionally, we infuse the broth with Kodava spices such as black pepper, cardamom, and cinnamon to add a distinct flavor profile. Preparation

    Preheat the oven to 180°C (350°F).

    In a large pot, bring the chicken or vegetable broth to a boil.

    Add the fragrant rice, black pepper powder, cardamom powder, and cinnamon powder to the boiling broth. Stir well and reduce the heat to low. Cook the rice until it is 80% done.

    In a separate saucepan, heat the coconut milk over low heat until warm.

    Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
