Dish
Barfi
Barfi is a dense and fudgy sweet that is perfect for satisfying a sweet tooth. It is made by cooking condensed milk and sugar together until it thickens and forms a dough. The dough is then flavored with cardamom, rose water, or saffron, and is pressed into a greased pan. Once it cools, it is cut into small squares and topped with nuts or coconut flakes.
Origins and history
Barfi originated in India and is a popular sweet during festivals and celebrations. It is believed to have been inspired by the Persian sweet, Barf, which means snow.
Dietary considerations
Contains dairy and nuts.
Variations
There are many variations of Barfi, including using different flavors, such as pistachio or mango, and adding chocolate or fruit to the dough.
Presentation and garnishing
To prevent the dough from sticking to the pan, be sure to grease it well before pressing the dough into it. Allow the Barfi to cool completely before cutting it into squares. It can be garnished with silver leaf, pistachios, almonds, or saffron strands.
Tips & Tricks
Barfi can be stored in an airtight container in the refrigerator for up to a week. To make it more chewy, add a tablespoon of ghee to the dough while cooking.
Side-dishes
Barfi is typically served as a dessert or as a snack with tea or coffee. It can be paired with fresh fruits or ice cream.
Drink pairings
Barfi pairs well with a sweet dessert wine, such as Riesling or Gewürztraminer.
