Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large mixing bowl, combine the flour, granulated sugar, and salt. Add the cold cubed butter and use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

3.Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for 30 minutes.

4.In a separate bowl, combine the sliced apples, brown sugar, passion fruit juice, coconut milk, cinnamon, nutmeg, cornstarch, lemon juice, and lemon zest. Mix well to coat the apples evenly.

5.Roll out one portion of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and press it gently into the bottom and sides.

6.Pour the apple filling into the pie crust and sprinkle shredded coconut on top.

7.Roll out the second portion of the chilled dough and cut it into thin strips. Create a lattice pattern on top of the pie by weaving the strips over and under each other.

8.Trim any excess dough and crimp the edges to seal the pie.

9.Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
