The crust is also given an Indo twist by incorporating ghee, a traditional Indian clarified butter. Preparation

1.In a large mixing bowl, combine the flour and salt. Add the chilled butter and ghee. Use your fingertips to rub the butter and ghee into the flour until the mixture resembles coarse crumbs.

2.Gradually add ice water, a tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape them into discs, and wrap in plastic wrap. Refrigerate for at least 30 minutes.

3.Preheat the oven to 190°C (375°F).

4.In a separate bowl, combine the sliced apples, granulated sugar, cinnamon, cardamom, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.

5.Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish and gently press it into the bottom and sides.

6.Pour the apple mixture into the pie crust, spreading it out evenly.

7.Roll out the second disc of dough and place it over the apple filling. Trim any excess dough and crimp the edges to seal the pie.

8.Brush the top crust with beaten egg and sprinkle with turbinado sugar.

9.Make a few slits on the top crust to allow steam to escape during baking.
