Ingredients

In this Indo-style Apple Pie, we infuse the classic American dessert with Indo spices such as cardamom, cinnamon, and nutmeg. The crust is also given an Indo twist by incorporating ghee, a traditional Indian clarified butter. Preparation

    In a large mixing bowl, combine the flour and salt. Add the chilled butter and ghee. Use your fingertips to rub the butter and ghee into the flour until the mixture resembles coarse crumbs.

    Gradually add ice water, a tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape them into discs, and wrap in plastic wrap. Refrigerate for at least 30 minutes.

    In a separate bowl, combine the sliced apples, granulated sugar, cinnamon, cardamom, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.
