Preparation

  1. 1.
In a large mixing bowl, combine the all-purpose flour, shredded coconut, and salt.
  2. 2.
Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingertips to cut the butter into the flour until it resembles coarse crumbs.
  3. 3.
Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. 4.
Preheat the oven to 190°C (375°F).
  5. 5.
In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, all-purpose flour, cinnamon, nutmeg, rum, lime zest, and lime juice. Toss until the apples are evenly coated.
  6. 6.
Roll out one portion of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and press it gently into the bottom and sides.
  7. 7.
Pour the apple filling into the pie crust, spreading it out evenly.
  8. 8.
Roll out the second portion of the chilled dough and cut it into strips. Create a lattice pattern on top of the apple filling by weaving the strips over and under each other.
  9. 9.
Trim any excess dough and crimp the edges to seal the pie.
  10. 10.
Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  11. 11.
Remove from the oven and let it cool for at least 30 minutes before serving.

Treat your ingredients with care...

  • Apples — Choose firm and tart apples such as Granny Smith or Braeburn for the best texture and flavor in the pie.
  • Rum — Use a good quality dark rum to add depth and richness to the filling.
  • Lime — Make sure to zest the lime before juicing it for maximum flavor.

Tips & Tricks

  • For a decorative touch, brush the lattice crust with a beaten egg and sprinkle some shredded coconut on top before baking.
  • Serve the Puerto Rican Apple Pie warm with a scoop of coconut or vanilla ice cream for a truly indulgent treat.
  • If you prefer a sweeter filling, increase the amount of granulated sugar to your taste.
  • Make the pie dough in advance and refrigerate it overnight for even better flavor and texture.
  • Leftover pie can be stored in the refrigerator for up to 3 days. Reheat in the oven before serving.
