Preparation

1.In a large mixing bowl, combine the all-purpose flour, shredded coconut, and salt.

2.Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingertips to cut the butter into the flour until it resembles coarse crumbs.

3.Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

4.Preheat the oven to 190°C (375°F).

5.In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, all-purpose flour, cinnamon, nutmeg, rum, lime zest, and lime juice. Toss until the apples are evenly coated.

6.Roll out one portion of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and press it gently into the bottom and sides.

8.Roll out the second portion of the chilled dough and cut it into strips. Create a lattice pattern on top of the apple filling by weaving the strips over and under each other.
