Preparation

1.Heat the vegetable oil in a large pan or wok over medium heat.

2.Add the sausages and cook until browned. Remove from the pan and set aside.

3.In the same pan, add the onion, garlic, and red chili. Sauté until the onion is translucent.

4.Add the corn kernels and cook for another 2 minutes.

5.Push the ingredients to one side of the pan and add the cooked jasmine rice to the other side. Break up any clumps of rice with a spatula.

6.Mix the rice with the other ingredients in the pan and add the fish sauce, soy sauce, and oyster sauce. Stir well to combine.

7.Add the cooked sausages back to the pan and stir-fry for another 2-3 minutes.

8.Remove from heat and stir in the lime juice, fresh cilantro, mint leaves, and green onions.

9.Season with salt and pepper to taste.
