Preparation

1.Preheat the grill to medium-high heat.

2.In a small bowl, combine the minced garlic, dried oregano, dried thyme, dried rosemary, ground cumin, paprika, salt, black pepper, olive oil, lemon juice, honey, and red wine vinegar. Mix well to create the marinade.

3.Place the racks of pork ribs in a large dish and pour the marinade over them, ensuring they are evenly coated. Cover the dish and refrigerate for at least 2 hours, or overnight for best results.

4.Remove the ribs from the marinade and let any excess marinade drip off.

5.Grill the ribs over medium-high heat for about 30-40 minutes, turning occasionally, until they are cooked through and nicely charred.

6.Remove the ribs from the grill and let them rest for a few minutes before serving.

7.Cut the ribs into individual portions and serve hot.

- Pork Ribs — For tender ribs, marinate them overnight to allow the flavors to penetrate the meat. Additionally, make sure to remove the thin membrane on the bone side of the ribs before marinating for better texture.
