Ingredients
In this Dutch adaptation, we have incorporated Dutch culinary influences by using traditional Dutch ingredients and techniques. The original Carlota de limón typically uses condensed milk, but we have replaced it with Dutch whipped cream to achieve a lighter and creamier texture. Preparation

1.In a small bowl, dissolve gelatin in 50ml (1/4 cup) of water and set aside.

2.In a mixing bowl, combine the lemon juice, lemon zest, and sugar. Stir until the sugar is dissolved.

3.In a separate bowl, whip the Dutch whipped cream until soft peaks form.

4.Gently fold the whipped cream into the lemon mixture.

5.Heat the remaining 200ml (3/4 cup) of water in a saucepan until hot but not boiling. Remove from heat and add the dissolved gelatin, stirring until fully incorporated.

6.Gradually pour the gelatin mixture into the lemon and cream mixture, stirring gently to combine.

7.Line the bottom of a round cake pan with ladyfingers, breaking them if necessary to fit.

8.Pour half of the lemon mousse mixture over the ladyfingers, spreading it evenly.

9.Repeat the layering process with another layer of ladyfingers and the remaining lemon mousse mixture.

10.Cover the cake pan with plastic wrap and refrigerate for at least 4 hours, or until set.

11.Before serving, garnish with additional lemon zest.
