Preparation

1.In a large pot, heat some oil over medium heat. Add the pork cubes and cook until browned on all sides. Remove the pork from the pot and set aside.

2.In the same pot, add the minced garlic, chopped onion, and sliced ginger. Sauté until fragrant.

3.Add the soaked white beans, chicken broth, star anise, and Sichuan peppercorns to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.

4.Add the browned pork, sliced carrots, cubed potatoes, bok choy, and Chinese mushrooms to the pot. Simmer for an additional 30 minutes or until the vegetables are cooked through.

5.Season with salt and pepper to taste. Remove the star anise before serving.

6.Serve the Chinese-style Mountain Stew hot, garnished with fresh cilantro or green onions.
