Preparation

1.In a large bowl, whisk together the lime juice, chili powder, and cumin. Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes.

2.In a separate bowl, whisk together the cornmeal, flour, salt, and black pepper. Remove the chicken from the marinade and coat each piece in the cornmeal mixture.

3.Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

4.In the same skillet, add the garlic and cook for 1-2 minutes, until fragrant. Add the honey, chipotle peppers, adobo sauce, and chicken broth. Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened.

5.Return the chicken to the skillet and toss to coat in the sauce. Cook for an additional 1-2 minutes, until heated through. Serve hot, garnished with sliced green onions.
