We have replaced some of the traditional ingredients with Mediterranean staples such as feta cheese, olives, and fresh herbs to give it a distinct Greek twist. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large pot, heat the olive oil over medium heat. Add the minced garlic and sliced red onion, and sauté until fragrant and slightly caramelized.

3.Add the diced tomatoes, dried oregano, fresh dill, and fresh parsley to the pot. Cook for 5 minutes, stirring occasionally.

4.Pour the chicken or vegetable broth into the pot and bring it to a boil.

5.Reduce the heat to low and add the sliced potatoes. Simmer for 10 minutes or until the potatoes are tender.

6.Arrange the thinly sliced chicken breast, lamb shoulder, and shrimp in separate sections of a large ovenproof dish.

7.Pour the hot broth and potato mixture over the meat and seafood.

8.Sprinkle the feta cheese and Kalamata olives over the top.

9.Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

10.Remove the foil and bake for an additional 10 minutes or until the cheese is golden and bubbly.
