Ingredients
While the Chinese hot pot typically features a variety of meats, seafood, and vegetables cooked in a savory broth, the Caribbean Hot Pot incorporates the bold flavors of the Caribbean. Instead of traditional Chinese spices, we use a blend of Caribbean spices like jerk seasoning, allspice, and thyme to infuse the broth with a unique island twist. 1.In a large pot, combine the chicken broth, coconut milk, jerk seasoning, allspice, thyme leaves, and minced garlic. Bring the mixture to a simmer over medium heat.

2.Add the sliced chicken thighs, shrimp, plantains, yams, onion, and bell peppers to the pot. Season with salt and pepper to taste.

3.Cover the pot and let the ingredients cook for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.

4.Once cooked, remove the pot from heat and garnish with fresh cilantro.
