Ingredients

We substitute the tortillas with crispy baguette slices, infuse the dish with aromatic herbs and spices, and add a touch of Vietnamese flair to the salsa. 1.Preheat the oven to 180°C (350°F).

2.In a skillet, heat the vegetable oil over medium heat. Add the onion, garlic, and red chili. Sauté until the onion becomes translucent.

3.Add the diced bell peppers and tomatoes to the skillet. Cook for 5 minutes, until the vegetables soften.

4.Pour in the tomato sauce, fish sauce, soy sauce, and lime juice. Stir well to combine. Simmer for 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

5.While the sauce is simmering, place the baguette slices on a baking sheet and toast them in the preheated oven for 5 minutes, until crispy.

6.In a separate non-stick pan, fry the eggs to your desired doneness.

7.To assemble, place a slice of toasted baguette on a plate. Spoon a generous amount of the tomato sauce mixture over the baguette. Top with a fried egg. Repeat for the remaining slices of baguette and eggs.
