Ingredients
In this Hungarian adaptation of Huevos Rancheros, we use paprika-infused beans instead of black beans, and add a touch of sour cream to the tomato sauce for a creamier texture. Preparation

1.Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2.Add the red bell pepper and smoked paprika and cook for another 5 minutes.

3.Add the chopped tomatoes and kidney beans and simmer for 10 minutes, until the sauce has thickened.

4.Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 5 minutes.

5.Warm the corn tortillas in a dry skillet or in the oven.

6.To serve, place a tortilla on each plate and top with the tomato and bean mixture, an egg, and a dollop of sour cream. Serve with Hungarian-style pickled vegetables on the side.

Tips & Tricks
- If you don't have smoked paprika, you can use regular paprika and add a pinch of cayenne pepper for heat.
