Treat your ingredients with care...

  • Soba noodles — Cook the soba noodles according to the package instructions, but make sure not to overcook them as they should retain a slight chewiness.
  • Tofu — Use firm tofu for this recipe to ensure it holds its shape when fried. Press the tofu before slicing to remove excess moisture and enhance its texture.

Tips & Tricks

  • For an extra kick of heat, add a few slices of fresh green chili to the sauce.
  • Customize the spiciness by adjusting the amount of red chili powder to suit your taste.
  • If you prefer a milder flavor, reduce the amount of spices used in the sauce.
  • Experiment with different toppings such as sliced scallions or crushed peanuts for added texture and flavor.
  • Leftovers can be refrigerated and enjoyed the next day. Reheat gently in a pan or microwave, adding a splash of water if needed to prevent drying.
