Preparation

1.In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

2.Add the red bell pepper, carrot, and zucchini to the pot. Cook for 5 minutes, until the vegetables are slightly softened.

3.Stir in the tomato paste, paprika, dried oregano, dried thyme, and chili flakes. Cook for another minute to release the flavors.

4.Pour in the fish broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes to allow the flavors to meld together.

5.Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.

6.Add the mixed seafood to the pot and cook for 5-7 minutes, until the seafood is cooked through.

7.Season with salt and pepper to taste.

8.To serve, divide the cooked rice noodles among serving bowls. Ladle the hot Croatian-style Laksa over the noodles. Garnish with fresh cilantro and serve with lemon wedges on the side.
