1.In a large mixing bowl, combine the blood sausage, barley flour, cumin, coriander, sumac, and salt. Mix well until all the ingredients are evenly incorporated.

2.Heat a drizzle of olive oil in a frying pan over medium heat.

3.Take a small portion of the sausage mixture and shape it into a patty. Place the patty in the hot pan and cook for about 5 minutes on each side, or until the sausage is cooked through and nicely browned.
