Preparation

1.Preheat the oven to 325°F (160°C). Grease a 9-inch (23cm) springform pan.

2.In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.

3.In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the coconut milk and mix until well combined.

4.Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, passion fruit juice, and flour until the batter is smooth.

5.Pour the batter into the prepared crust and smooth the top with a spatula.

6.Bake for 60-70 minutes, or until the edges are set and the center is slightly jiggly.

7.Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan.
