1.In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the chopped spinach to the pot and cook until wilted.

3.In a separate pot, bring the vegetable broth and water to a boil.

4.Slowly whisk in the cornmeal, stirring constantly to avoid lumps.

5.Reduce the heat to low and continue cooking the polenta, stirring frequently, for about 20 minutes or until thickened.

6.Add the cooked spinach mixture, ground ginger, ground coriander, ground cumin, salt, and pepper to the polenta. Stir well to combine.

7.Cook for an additional 5 minutes, allowing the flavors to meld together.
