In this Malagasy adaptation, the traditional Indian Pulihora is transformed into a unique Malagasy-style Tamarind Rice. While the original dish uses Indian spices like cumin and coriander, the Malagasy version incorporates local spices such as turmeric, mustard seeds, and curry leaves. Preparation

1.Rinse the rice thoroughly and cook it with water in a rice cooker or on the stovetop until it is fluffy and cooked.

2.In a separate bowl, soak the tamarind pulp in warm water for 10 minutes. Extract the pulp and discard the seeds and fibers.

3.Heat vegetable oil in a large pan over medium heat. Add mustard seeds and let them splutter.

4.Add turmeric powder and curry leaves to the pan and sauté for a minute.

5.Add the tamarind pulp to the pan and mix well with the spices.

6.Add the cooked rice to the pan and gently mix it with the tamarind mixture until the rice is evenly coated.

7.Season with salt and mix again.

8.Remove from heat and garnish with roasted peanuts and fresh coriander leaves.
