Preparation

1.In a large bowl, combine the mashed potatoes, chopped onion, minced garlic, paprika, dried thyme, dried rosemary, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2.Shape the potato mixture into small patties, about 2 inches in diameter.

3.Heat olive oil in a frying pan over medium heat. Place the potato patties in the pan and cook until golden brown on both sides. Remove from the pan and set aside.

4.In a separate pan, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

5.Add the chopped tomatoes, paprika, dried thyme, dried rosemary, cumin powder, salt, and pepper to the pan. Cook for a few minutes until the tomatoes soften.
