Preparation

1.Preheat the oven to 180°C (350°F).

2.Heat the vegetable oil in a large pan over medium heat. Add the onion and sauté until translucent.

3.Add the carrots, leek, bell pepper, cabbage, and bean sprouts to the pan. Cook for 5 minutes, until the vegetables are slightly softened.

4.In a small bowl, mix together the soy sauce, sweet chili sauce, salt, and pepper. Pour the sauce over the vegetables and stir well to combine.

5.Remove the pan from heat and let the filling cool slightly.

6.Take one spring roll wrapper and place it on a clean surface. Spoon a portion of the vegetable filling onto the wrapper, leaving a small border around the edges.

7.Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, sealing the edges with a bit of water.
