Ingredients
In this South Sudanese adaptation of Suspiritos, we infuse the meringue cookies with traditional South Sudanese spices such as cardamom and cinnamon. 1.Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.

2.In a clean mixing bowl, beat the egg whites until soft peaks form.

3.Gradually add the granulated sugar, cardamom, cinnamon, salt, and vanilla extract to the egg whites. Continue beating until stiff peaks form.

4.Spoon the meringue mixture onto the prepared baking sheet, forming small cookies.

5.Bake for 1 hour or until the meringue cookies are crisp and dry.

6.In the meantime, prepare the coconut cream by whisking the coconut cream and powdered sugar together until smooth and creamy.

7.Once the meringue cookies have cooled, spoon a dollop of coconut cream onto each cookie.
