1.In a blender, combine the diced mango, diced papaya, minced Scotch bonnet peppers, minced garlic, Caribbean jerk seasoning, soy sauce, brown sugar, apple cider vinegar, and vegetable oil. Blend until smooth to create the marinade.

2.Place the thinly sliced pork shoulder in a large bowl and pour the marinade over it. Mix well to ensure the pork is evenly coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

3.Preheat your grill or grill pan over medium-high heat. Remove the marinated pork from the refrigerator and thread the slices onto skewers, alternating with pineapple slices.
