Preparation

1.Heat olive oil in a large skillet over medium heat. Add the diced lamb and cook until browned on all sides. Remove the lamb from the skillet and set aside.

2.In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

3.Add the ground cumin, ground coriander, ground cinnamon, paprika, and cayenne pepper (if using) to the skillet. Stir well to coat the onions and garlic with the spices.

4.Return the browned lamb to the skillet and mix it with the spiced onion mixture.

5.Pour in the vegetable broth, tomato paste, and honey. Season with salt and pepper to taste. Stir to combine all the ingredients.

6.Reduce the heat to low, cover the skillet, and simmer for 1 hour, or until the lamb is tender and the flavors have melded together.

7.Stir in the chopped dates and sliced green olives. Cook for an additional 5 minutes to allow the flavors to blend.
