Preparation

1.In a large mixing bowl, beat the egg yolks and sugar until creamy and pale yellow.

2.Add the dulce de leche and vanilla extract to the egg yolk mixture. Mix until well combined.

3.In a separate bowl, whip the heavy cream until stiff peaks form.

4.Gently fold the whipped cream into the dulce de leche mixture.

5.In another bowl, beat the egg whites until stiff peaks form.

6.Carefully fold the beaten egg whites into the dulce de leche mixture.

7.Dip each ladyfinger into the brewed yerba mate and arrange a layer of soaked ladyfingers in the bottom of a serving dish.

8.Spread a layer of the dulce de leche mixture over the ladyfingers.

9.Repeat the layers until all the ingredients are used, ending with a layer of the dulce de leche mixture.

10.Sift the cocoa powder over the top layer and sprinkle with grated dark chocolate.

11.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.
