Ingredients
In this West African adaptation of Trigona Panoramatos, we have replaced the traditional Greek ingredients with West African counterparts. The original recipe uses feta cheese, but we have substituted it with groundnut powder, which adds a nutty flavor. Additionally, we have incorporated palm oil, ginger, garlic, and cayenne pepper to infuse the dish with the vibrant spices of West African cuisine. Preparation

1.In a large bowl, combine the flour, baking powder, and salt. Mix well.

2.Add the palm oil to the flour mixture and mix until crumbly.

3.Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.

4.In a separate bowl, combine the ground beef or lamb, chopped onion, minced garlic, grated ginger, cayenne pepper, groundnut powder, salt, and pepper. Mix well.

5.Roll out the dough on a floured surface and cut into small triangles.

6.Place a spoonful of the meat mixture onto each triangle and fold the dough over to form a triangle shape. Press the edges to seal.

7.Heat vegetable oil in a deep pan or skillet over medium heat. Fry the pastries until golden brown on both sides. Remove and drain on paper towels.

8.In a small saucepan, heat the honey and lemon juice until warmed through.

9.Drizzle the honey glaze over the fried pastries.
