  1. 1.
Preheat the oven to 180°C (350°F) and grease a round cake pan.

In a large skillet, heat the vegetable oil over medium heat. Add the sliced onions and cook until they are soft and translucent.
  3. 3.
Stir in the Surinamese masala spice blend and sambal, and cook for an additional 2 minutes to allow the flavors to meld.
  4. 4.

  5. 5.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. 6.
Spread half of the batter into the greased cake pan. Top with half of the cooked onions. Repeat the layers with the remaining batter and onions.

  8. 8.
Allow the Surinamese Onion Cake to cool for a few minutes before removing it from the pan. Garnish with fresh cilantro and serve warm.

Treat your ingredients with care...

  • Onions — Make sure to thinly slice the onions for even cooking and distribution throughout the cake.
  • Surinamese masala spice blend — If you can't find a ready-made blend, you can make your own by combining ground cumin, coriander, turmeric, and cloves.
  • Sambal — Adjust the amount of sambal according to your spice preference. Add more for extra heat or reduce for a milder flavor.
  • Fresh cilantro — If you're not a fan of cilantro, you can substitute it with parsley for a milder herb flavor.

Tips & Tricks

  • For added flavor, you can sprinkle some grated cheese between the layers of onions.
