Ingredients
In this Maldivian adaptation of the Croatian dish Zec na hvarski, we incorporate the vibrant flavors of Maldivian cuisine. The original recipe is traditionally prepared by marinating the rabbit in wine and herbs, then slow-cooking it in the oven. In our version, we replace the wine with a blend of Maldivian spices, such as cumin, coriander, and turmeric, to infuse the rabbit with a tropical twist. Additionally, we serve the dish with coconut rice, which adds a touch of sweetness and complements the flavors of the grilled rabbit. We alse have the original recipe for Zec na hvarski, so you can check it out.

Preparation
-
1.In a bowl, combine the cumin powder, coriander powder, turmeric powder, chili powder, minced garlic, grated ginger, lime juice, and salt to create a marinade.
-
2.Rub the marinade all over the rabbit pieces, ensuring they are well coated. Let the rabbit marinate for at least 2 hours, or overnight for best results.
-
3.Preheat the grill to medium-high heat.
-
4.Grill the rabbit pieces for about 10-12 minutes per side, or until cooked through and slightly charred.
-

-
6.Serve the grilled rabbit over a bed of coconut rice and garnish with fresh cilantro.
Treat your ingredients with care...
- Coconut milk — Use full-fat coconut milk for a creamy and rich flavor.
- Basmati rice — Rinse the rice before cooking to remove excess starch and achieve fluffy grains.
Tips & Tricks
- If you prefer a spicier flavor, increase the amount of chili powder in the marinade.
- For a smokier taste, grill the rabbit over charcoal instead of a gas grill.
- If rabbit is not available, you can substitute it with chicken or lamb.
