1.Heat the vegetable oil in a large pot over medium heat. Add the sliced onion, minced garlic, grated ginger, Sichuan peppercorns, and star anise. Sauté for 2-3 minutes until fragrant.

2.Add the soy sauce, rice vinegar, and chili bean paste to the pot. Stir well to combine the flavors.

3.Add the fish fillets to the pot and gently stir to coat them with the sauce. Cook for 2-3 minutes until the fish starts to turn opaque.

4.Pour in the fish or vegetable broth and bring the mixture to a simmer. Reduce the heat to low and let it simmer for 10-15 minutes to allow the flavors to meld together.

5.Stir in the dissolved cornstarch mixture to thicken the broth. Cook for an additional 2-3 minutes until the broth has thickened slightly.

6.Season with salt to taste. Remove the star anise from the pot.
