Ingredients
While the original American barbecue ribs are typically seasoned with a dry rub and slow-cooked, this Thai adaptation adds a Thai twist to the marinade and glaze. Lemongrass, ginger, and chili are used to infuse the ribs with a burst of Thai flavors. The cooking method remains similar, but the flavors are distinctly Thai. 1.In a large bowl, combine the lemongrass, garlic, ginger, red chilies, soy sauce, fish sauce, honey, lime juice, and vegetable oil. Mix well to create the marinade.

2.Place the racks of ribs in a shallow dish and pour the marinade over them, ensuring they are fully coated. Cover and refrigerate for at least 4 hours, or overnight for best results.

3.Preheat the grill to medium-high heat.

4.Remove the ribs from the marinade, allowing any excess marinade to drip off. Reserve the marinade for basting.

5.Grill the ribs for about 20-25 minutes per side, basting with the reserved marinade every 5 minutes, until they are cooked through and nicely charred.

6.Remove the ribs from the grill and let them rest for a few minutes. Cut into individual ribs and garnish with fresh cilantro.
