Preparation

1.Rinse the rice under cold water until the water runs clear. Drain well.

2.In a medium-sized saucepan, bring the water to a boil. Add the rice and cook for 10 minutes, or until the rice is partially cooked. Drain and set aside.

3.In the same saucepan, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.

4.Add the partially cooked rice back to the saucepan and stir well to combine with the onion mixture.

5.Pour in the chicken broth and bring to a simmer. Reduce the heat to low and cover the saucepan. Cook for 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.

6.Stir in the soy sauce, sesame oil, black pepper, salt, and chili flakes (if using). Cook for an additional 2-3 minutes to allow the flavors to meld together.

7.Remove the saucepan from heat and let the rice pudding cool slightly.
