Ingredients

In this adaptation, the traditional Italian Canestrello is transformed by incorporating Schleswig-Holstein cheese and herbs, giving it a distinct Nordic twist. The original recipe typically uses Italian cheeses like Parmesan or Pecorino, along with Mediterranean herbs such as basil or oregano. By substituting these ingredients with local Schleswig-Holstein cheese and herbs like dill and chives, the dish takes on a new flavor profile that reflects the culinary traditions of the target cuisine. Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. 2.
Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. 3.
Preheat the oven to 180°C (350°F).
  4. 4.
In a separate bowl, combine the grated Schleswig-Holstein cheese, fresh dill, fresh chives, black pepper, and nutmeg. Mix well.
  5. 5.
On a lightly floured surface, roll out the chilled dough to a thickness of about 1/4 inch. Cut out circles using a round cookie cutter or a glass.
  6. 6.
Place a spoonful of the cheese and herb mixture onto each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal.
  7. 7.
Brush the tops of the pastries with the beaten egg wash.
  8. 8.
Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  9. 9.
Remove from the oven and let cool for a few minutes before serving.

Treat your ingredients with care...

  • Schleswig-Holstein cheese — Make sure to use a good quality Tilsiter or Holsteiner Tilsit cheese for the authentic flavor. If these cheeses are not available, you can substitute with a mild cheddar or Gouda.
  • Fresh dill and chives — To enhance the flavor, use fresh herbs rather than dried. If fresh herbs are not accessible, you can use dried dill and chives, but reduce the quantity by half.

Tips & Tricks

  • For a more pronounced Nordic flavor, sprinkle a pinch of caraway seeds on top of the pastries before baking.
  • Serve the Schleswig-Holstein Canestrello warm as an appetizer or alongside a fresh salad for a light lunch.
  • If you prefer a milder taste, you can reduce the amount of dill and chives in the filling.
  • Experiment with different types of Schleswig-Holstein cheese to find your favorite flavor combination.
  • These pastries can be made ahead of time and reheated in the oven before serving.

Serving advice
