Ingredients
In this Levantine adaptation of the Argentinian choripán, we replace the traditional pork sausages with spiced lamb sausages. The seasonings are also modified to incorporate Levantine flavors, such as cumin, coriander, and sumac. Additionally, the traditional chimichurri sauce is substituted with a tangy tahini sauce, which complements the flavors of the lamb sausages and adds a Middle Eastern touch to the dish. 1.Preheat the grill to medium-high heat.

2.Brush the lamb sausages with olive oil and place them on the grill. Cook for 10-12 minutes, turning occasionally, until they are browned and cooked through.

3.While the sausages are grilling, warm the Levantine flatbreads on the grill for a minute on each side.

4.In a bowl, combine the diced tomato, cucumber, and chopped parsley to make the salad.

5.Once the sausages are cooked, remove them from the grill and let them rest for a few minutes.

6.To assemble the sandwiches, place a grilled lamb sausage in each warmed flatbread. Top with the tomato-cucumber salad.
