The original Mexican enchiladas typically use chili powder and cumin for seasoning, while our Ivorian-inspired version uses a blend of coriander, ginger, and cayenne pepper. Additionally, the tomato sauce is enriched with peanuts, adding a creamy and nutty element to the dish. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a saucepan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

3.Add the ground coriander, ground ginger, and cayenne pepper to the saucepan. Stir well to combine the spices with the onion and garlic.

4.Pour in the tomato sauce and peanut butter, and stir until the sauce is smooth and well combined. Season with salt and pepper to taste.

5.In a separate bowl, combine the shredded chicken with a small amount of the tomato and peanut sauce, mixing well to coat the chicken.

6.Warm the tortillas in a dry skillet or microwave until pliable.

7.Spoon a generous amount of the chicken mixture onto each tortilla, roll them up tightly, and place them seam-side down in a baking dish.

8.Pour the remaining tomato and peanut sauce over the enchiladas, spreading it evenly.

10.Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
