Preparation

1.In a small bowl, dissolve the saffron threads in 2 tablespoons of warm water. Let it steep for 10 minutes.

2.In a large mixing bowl, combine the flour, yeast, salt, and sugar. Make a well in the center.

3.Pour the saffron water, warm water, and olive oil into the well. Mix well until a dough forms.

4.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.

5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

6.Preheat the oven to 200°C (400°F).

7.Punch down the dough and transfer it to a greased baking sheet. Press it down to form a rectangular shape.

8.In a small bowl, mix together the ground cumin, ground coriander, and paprika. Sprinkle the spice mixture evenly over the dough.
