Preparation

1.Cut the pork fatback into small cubes and place them in a large skillet over medium heat.

2.Cook the fatback slowly, stirring occasionally, until the fat is rendered and the cubes turn golden and crispy. This process may take around 30-40 minutes.

3.Once the fatback is crispy, remove it from the skillet using a slotted spoon and transfer it to a plate lined with paper towels to drain excess fat.

4.In the same skillet, add the chopped onion and minced garlic. Sauté until they turn golden and fragrant.

5.Sprinkle the cumin, paprika, and sumac over the onions and garlic. Stir well to combine.
