Preparation

1.In a bowl, combine the turmeric powder, coriander powder, galangal powder, soy sauce, and vegetable oil to make the marinade. Mix well.

2.Place the thinly sliced ham in the marinade and let it marinate for at least 30 minutes.

3.Meanwhile, prepare the peanut sauce by combining the ground roasted peanuts, sweet soy sauce, tamarind paste, palm sugar, minced garlic, chopped red chili, and water in a saucepan. Cook over low heat, stirring occasionally, until the sauce thickens. Set aside.

4.Preheat a grill or grill pan over medium heat. Grill the marinated ham slices for 2-3 minutes on each side, until they are slightly charred and heated through.

5.Slice the baguette portions lengthwise, leaving one side intact. Spread a generous amount of the peanut sauce on the inside of the baguette.

6.Place the grilled ham slices on top of the peanut sauce, followed by cucumber slices and fried shallots.
