1.In a large bowl, combine the minced meat, chopped onion, minced garlic, lemongrass, grated galangal, ground turmeric, ground cumin, salt, black pepper, fresh parsley, and fresh coriander.

2.Mix well until all the ingredients are evenly combined.

3.Add the eggs to the mixture and mix again until the eggs are fully incorporated.

4.Gradually add the breadcrumbs to the mixture, mixing well after each addition, until the mixture holds together and can be easily shaped into patties.

5.Shape the mixture into small patties, about the size of a golf ball.

6.Heat vegetable oil in a deep frying pan or pot over medium heat.

7.Fry the uštipci in batches until they are golden brown and crispy on the outside, and cooked through on the inside. This should take about 3-4 minutes per side.

8.Remove the uštipci from the oil and place them on a paper towel-lined plate to drain any excess oil.

9.Serve the Balinese-inspired uštipci hot, garnished with fresh herbs and accompanied by a dipping sauce of your choice.
