Preparation

1.In a large saucepan, combine the granulated sugar, water, coconut milk, lemon juice, orange juice, grated ginger, ground cinnamon, ground cloves, and cayenne pepper. Stir well to combine.

2.Place the saucepan over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

3.In a small bowl, whisk together the cornstarch and 1/4 cup (60ml) of water until smooth. Slowly pour the cornstarch mixture into the saucepan, stirring constantly.

4.Continue to cook the mixture over low heat, stirring constantly, until it thickens and pulls away from the sides of the pan, about 10-15 minutes.

5.Remove the saucepan from the heat and pour the mixture into a greased square baking dish. Smooth the top with a spatula.

6.Allow the lokum to cool at room temperature for 2 hours, then refrigerate for an additional 2 hours, or until set.
